Help for Aimeos

Hi everybody, I need a tip. I am developing an e-commerce like a delivery platform, I mean we manage in a unique platform several restaurants which offer food delivery service.
Which kind of Aimeos configuration should I use?
I have purchased a unique domain because these restaurants operate in the same city and the aim is that they are united under the same platform, but each of them must be able to manage its own menu and dishes and possibly they should manage different form of payment.
