Hi,
I sow that is possible to configure the application to use different db for a specific subdomain of tables: https://aimeos.org/docs/Laravel/Several_databases

Is it possible to configure a different database for each defined site?

No, because then you can also use one installation for each site if they should be independent.

Yes, you are right. The ideal would be to keep general settings common and to set up a dedicated DB for order and customer domains for each site. Is this possible?

You can use one database for customers, one for orders and one for the rest but not per site. Per site is only possible if you have one installation per site.
