i just downgraded PHP to 8.0.3 and reinstall aimeos and now is ok .
How can i overide e a extension or create a new theme

Not a good idea because this only installs an old version of Aimeos again. Please use PHP 8.1/8.2/8.3 and try again.

i have tried 3-4 times yesterday and i had the same error, so the quick solution i thought to do in that way so i can start with the project

That won't help you in the long run. We think we've fixed the problem with the current version.
