How to add stock for each Attribute?

Hi. Im new here ^^

I want to know how to add stock for each Attribute? For example, Im uploading a Men's shoes product. Its have color is Black, Brown, size is 40, 41. How to add stock like that:

- Black size 41: 5 product available
- Brown size 40: 7 product available

I see in User Manual have "Variant" tab. But in my Admin do not have:

The "Variants" tab only shows up if you select "Selection" as product type.

Is there any option for the SKU to be auto-filled instead of having to fill it in manually as it is now?

Not at the moment but it would be easy to do.
