Include Aimeos Shop-functionality in own customer Smartphone App

Can I access the shop functionalities of Aimeos in an app via an Aimeos API?
There is the question whether you can also map the purchase process that is currently running via the TYPO3 within an app.

I read something about JSON APIs in the doc, but I'm not sure if this applies to apps as well.

Yes, the JSON API offers the same feature set as the HTML frontend and you can use it to interact with Aimeos in your own smartphone app.
